The Adventure      

Chef Carlos Montoya can be the perfect addition to any outdoor trip.  After a long day of fishing, hunting, rafting, skiing or any other outdoor activity, you can come back to a freshly prepared fine dining experience without having to go back into civilization.  Carlos brings all of the flavor and ambience of a fine dining restaurant to any outdoor location.

For clients that are renting accommodations in town, Carlos can bring the fine dining experience to you as well. 

Menus change by season or special request. Please give a week's notice for special menu requests due to market prices and availability.

Cinnamon & Coffee rubbed pork loin with brocolini and a mushroom ragout
Italian Eggs Benedict (on the Romantic Menu)
Vanilla grilled mango and blackberries tossed in coconut cream with blackberry pomegranate sorbet

“Cowboy” New York Steak smoked with fruit and mesquite woods; roasted tomato and basil potatoes and grilled seasonal vegetables with balsamic demi glaze.

Hawaiian-style Pork tender loin served with grilled sweet potatoes, and baby spinach & rose petal salad tossed in a coconut &   lemongrass dressing.
